CF Mustard Chicken with Cheese and Mushrooms

Ingredients

4 chicken breasts (or 2 chicken breasts split in half)

1 pound cremini mushrooms, sliced

1 onion, sliced

honey mustard

4 ounces cheese (gouda, fontina, muenster, havarti), shredded or sliced.

1 head broccoli, chopped

1 pound carrots, chopped

1 sweet potato (or hard squash - acorn or butternut), chopped

Directions

Place chopped broccoli, carrots, and potato/squash on baking sheet. Toss with oil and spices (salt, pepper, thyme, garlic powder, whatever). Bake in oven at 400 for 20 minutes (may need longer, check that carrots and potato are soft).

Place chicken beasts in skillet on medium heat. Brush top side of chicken with honey mustard. When you can see white coming up the sides of the chicken breast, flip over to cook other side. Brush more honey mustard on this cooked side. Continue cooking until done. Place chicken on baking sheet to rest.

In now empty pan, add mushrooms and cook until much of their water has evaporated. Add onion and cook until translucent. Top chicken breasts with onion mixture.

Top chicken and mushrooms with cheese. Broil until cheese is melted. Serve with roasted vegetables.
